Ok let's get one thing straight. I don't care for sour cream and I don't drink coffee, (funny but there isn't any in this recipe!) but this bundt cake is one of my favorites! My mom has been making this coffee cake for as long as I can remember. Early some Sunday mornings, I would smell the cinnamon/sugar from my bedroom in the basement and would come running.

Here's what you will need:
1/2 C butter or margarine
1 C sugar
2 eggs
1 C sour cream
2 C flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 tsp vanilla extract

Topping:
1/4 C sugar
1 tsp cinnamon
1/2 C nuts (optional)

Instructions:
First cream the butter and sugar. Next add well beaten eggs. Now mix and sift the dry ingredients and add alternately with the sour cream. Lastly add the vanilla extract. Now pour half of the batter into a greased bundt pan (don't forget to grease the middle part like I did!) then sprinkle half of the topping mixture. Add the remaining batter and sprinkle the rest of the topping mixture on it. The batter will only fill up about half of the bundt pan, but don't worry, it will rise! Now pop it in the oven and bake at 350 degrees for 40-50 minutes. Test it with a knife after 40 minutes and if it comes out clean, it's done. As soon as it is finished turn it upside down onto a plate.
You have to eat it when it's hot though, and it's best served with a little bit of butter and a slice of cheddar cheese on the side, and don't forget a cup of coffee (or tea in my case). Enjoy!

xo,
Erin
